Few things are as comforting as tomato basil soup, especially when paired with a grilled cheese sandwich. This epic pairing makes a delicious lunch or dinner for children, children at heart, adults who love good food, and all those in between. It’s the ultimate comfort food and a childhood favorite for a reason. It’s a great one to have at the ready for those times when you need a quick, affordable, loved by everyone meal. Homemade tomato soup takes a bit more work than opening a can, but it’s not too time-consuming or difficult to make and homemade is infinitely better in the flavor department and so much healthier than the processed junk from a can.
Ultimate Tomato Basil Soup is a creamy, luscious, sweet tomato base with a hint of basil. I’m not breaking the mold when it comes to this soup -why mess with tradition when the classic is so good? The “ultimate” part of this soup comes from the cans of San Marzano tomatoes – the kings of the canned tomato world. With few ingredients in the recipe and a main base of tomatoes, it’s important to use the best quality tomato you can find. San Marzano tomatoes are canned at the peak of their goodness, which often makes them better quality than fresh, and it’s certainly easier to open a can than deal with weighing and peeling fresh ones. Bonus, you can make the soup year-round and it’ll taste the same. But if you’ve got a bumper crop of awesome tomatoes then, by all means, use the fresh ones. Tomatoes have enough liquid so I don’t add chicken broth, but I do chuck in some chicken bouillon to amp up the flavor without adding additional and unnecessary liquid. A bit of spice, a touch of cream, and some fresh basil and that’s it -simple to make and simply delicious!

That’s a tall order for a bowl of soup, but I think I achieved what I set out to accomplish. The great thing about Ultimate Tomato Soup is that it’s so easy to make you can make memories to your heart’s desire without breaking a sweat, because who wants that? This soup is about honoring the classic and creating something worthy of memories. Done and done. This soup has become our go-to around Christmas served with grilled cheese sandwiches. This soup has become our go-to around Christmas served with grilled cheese sandwiches. It also makes a perfect soup for a kid-friendly party. For the party, we served the soup with ham and cheese roll-ups. I fried them ahead of time and then warmed them in the oven when guests arrived. Ultimate Tomato Soup can be frozen.
