Sometimes, easy is the name of the game, especially when entertaining. It’s never fun to entertain when you’ve been slaving away in the kitchen and are tired and mentally checked out by the time your guests arrive. This salad is a great Trader Joe’s cheat on those days you have unexpected guests or need to whip something up for a potluck, barbecue, or hungry family. It’s a nice option for a cook-free night served alongside a rotisserie chicken or it makes a great accompaniment to grilled fish. Easy doesn’t mean it needs to lack flavor.
This takes the holy trinity of fresh tomatoes, fresh mozzarella, and basil and knocks it up a notch without sacrificing the ease of the original dish. I often use these same ingredients (minus the salad) and skewer them for a great go-to, crowd pleasing appetizer, but skewering isn’t always my idea of fun, so this time around I threw it all in a bowl, called it a salad, and had the pleasure of eating it that much sooner. And if you have a Trader Joe’s in your neighborhood, you’re set, because then it’s a one-stop shop and then dump it in a bowl kind of dish. Why can’t they all be so easy and good?
