This came out of an oh-no- thought-I-didn’t-have-to-cook-and-now-I-do-bleep kind of moment. A desperate pantry grab, defrost the country pork ribs in the microwave, snatch the bbq sauce because you’re feeling a down home country kind of thing, and then grab the pressure cooker cuz there ain’t no time, baby (and no time for grammar neither). With a baby crying, toddler underfoot, dada on the way, this was a true pull it out of a hat, panicked, git’er done kind of moment. But in that bedlam a thing of beauty was born.
It’s homey and comforting with a smidgen of sass, a bit of sweet, a touch of tang, and a whole lotta tenderness (sounds like my two year old). It’s a lot of familiar with a touch of not. Serve the ribs with rice pilaf and some green beans and you’ve got one heck of a (10 ingredient) meal. Bam! This is the ultimate quick and easy meal- simple, quick, few ingredients, very little prep, crowd pleaser. It’s comfort food at its best (and easiest). People will be satisfied, impressed, singing your praises, or all the above. Nobody needs to know how easy it is to prepare. I won’t tell. I promise.
