Bar none, this is my favorite way to eat salmon. The fatty salmon is the perfect fish to compete with the marinade and its spicy-sweet, garlic-ginger, soy-sesame punch of flavor. Each component of the marinade is a powerhouse on its own and together they create a thing of balance and beauty. And then throw that sauce and salmon on the grill and it’s the match of the century. The marinade caramelizes and chars in spots (yum) and gives the salmon a smoky, sticky glaze that, if you’re lucky, gives the edges a sweet, crispy crust (double yum). You’ll fight over the charred crispy, sweet salmon bits. Maybe that’ll be the match of the century? But that’s not all.
With an amazing sauce like this, why stop at the salmon? I use some of the marinade on vegetables and throw them on the grill alongside the salmon. Sometimes I sprinkle the marinade on asparagus and grill it. I serve the asparagus with Sesame Noodles and it’s the perfect meal. Other times, I serve it with steamed jasmine rice and Snap Pea Medley, another perfect meal. Like me children, I won’t pick sides. They’re both perfect in their own way. This meal makes a wonderful weeknight meal-easy prep, quick cook, easy clean-up. It’s a summer weeknight grilling favorite in our house. But it’s also a stunning, and stunningly delicious meal, perfect for when company’s over.
