This chicken is bomb digitty. My picture does not do this chicken justice and that makes me sad because this chicken is so insanely good that I’m struggling to come up with words to describe its awesomeness, and failing miserably. In the mean time, I’m plotting when and where to score lots of Parmesan cheese and making strategic meal plans just so I can serve this fantabulous Parmesan chicken again (and again). Parmesan Chicken and…Ratatouille, Warm Med Orzo Salad, One-Pot Pesto Cavatappi, Insanely Good Caesar Salad, One-Pot Italian Mac and Cheese, Herb Roasted Potatoes, Savory Waffles, and the list goes on. Sounds good, huh? But then I thought why bother with the rest when I would happily make do with a bucket (or giant bowl) of Parmesan Chicken? Who needs accompaniments when the star of the show is so stinking good? Truth be told, I strategically planned meals for all times of the day so that I can get my crispy, cheesy chicken goodness fix morning, noon, and night. Yet, double truth be told, I’m not so handy in the kitchen come breakfast time. So, the new as yet to be realized plan (dream or chicken insanity) is to buy lots and lots of Parmesan cheese and to set aside time to make a gigantic batch so that Parmesan Chicken will be part of my life forever. Amen. Dream big, they say.
The great thing, though, is that I don’t have to set too much time aside because Parmesan Chicken is easy to make. The marinade, the breading station, and the assembly of the chicken all take seconds and the cook time is mere minutes. I marinate the chicken in a gallon-size bag (easy clean-up, except for the time that I pounded the chicken in the bag-learn from my failings). Then I turn leftover Parmesan breading into Parmesan crisps (no waste and so yum!).
