Sometimes all you need is a big bowl of cheesy, gooey, beefy pasta. Let’s face it, after a long day of work what you really want or need is for someone to hand you a big bowl of creamy, beefy pasta. On these days the ease of boxed pasta, dare I say it, hamburger helper sounds pretty darn good. But did you know you can make homemade, unprocessed, way better than the box stuff, ready in 20 minutes, all in ONE POT cheeseburger goodness? And by goodness I mean tasty, fast and healthy, well as healthy as cheesy, beefy pasta can be. But, hey, there’s vegetables in there, too. That negates all unhealthy bits, right? Box Schmox. Who needs it? You certainly won’t after you make this and see how easy and delicious homemade can be.
I start with a mirepoix, which is just fancy talk for diced onions, carrots, and celery. The mixture gives the dish flavor the natural way, and it’s a great way to get your kids to eat some veg- dice them small enough and no one is the wiser once the creamy sauce does its magic. Feel free to leave out any, or all, of the vegetables. It’s your pasta, after all. Now, fry up some beef, add some spices, saucy elements, and noodles, and away you go. Mere minutes later, about 11 to 14 minutes, and you’ve got a pot full of beefy pasta goodness. Stir in some cheese and add more on top for the heck of it, cover the lid, and wait ten minutes, if you can. And done. Magic! This is grade A gourmet, chef is in the HOUSE, get in my tummy now pasta.
