Ras el Hanout. That’s the magical spice mix that makes this meal easy and tasty – two of the best ways to describe a meal these days. I love meals that use the same flavor profile or spice blend in different applications – it makes cooking easier and faster and the dishes compliment each other while maintaining their singular presence. It’s also a great way to use up spices instead of letting them sit in the spice cupboard.
I first encountered the spice blend ras el hanout while watching Top Chef many, many years ago. (love that show!) Intrigued by the lovely sounding spice blend I found the Al’fez brand at World Market – a fantastic ras el hanout blend, by the way – and I’ve been using it happily ever since. It’s now widely available online, both the Al’fez brand and lots of other brands that I haven’t tried. (thanks, Amazon) Ras el Hanout is a North African spice blend traditionally comprised of a dozen spices. Each blend is unique but common spices include cardamom, cinnamon, coriander, nutmeg, and cloves. The Al-fez brand also includes lavender and rose petals. I love the addition of rose petals. It’s visually appealing and adds a subtle je ne se quoi to dishes.
For the meal, rub ras el hanout on cod fillets and fry in a pan with orange peel and olives. It’ll be done in less than 10 minutes! Blitz cauliflower in a food processor until it resembles couscous. Sauté the cauliflower with an onion-garlic base, ras el hanout, orange peel, pine nuts, chicken bouillon, and red pepper flakes. Once the onions are tender, the cauliflower couscous will cook in 3-4 minutes! Sometimes if I have an extra large cauliflower I’ll make a bonus cauliflower medley. I’ll cook cauliflower florets with an onion-garlic base, ras el hanout, golden raisins, a tomato, cannelloni beans, and green beans.
You’ll be amazed at how quickly this meal comes together plus it’s healthy and incredibly flavorful! It’s also gluten-free and a tasty option for those watching carbs. The cauliflower couscous and cauliflower medley make a wonderful vegetarian meal.
