In part two of my indecisive fusion 2fer moment (leftovers disguised as something new), I made chimichangas, or fried crunchy wonders, from leftover Massaman lentils. I wanted to up the crunch factor even more so I made a quick salad with purple cabbage, red peppers, carrots, and cilantro. In what was really a 4fer moment (leftovers transformed two ways), I also turned the leftover curry into a wrap: super quick prep, portable goodness, where the salad is transformed into a slaw that goes inside of the sandwich. The wrap was easy, also crunchy, and ready in five minutes! Both have good things going on: they’re delicious, portable, 2fers (or 4fers?), and fusion.
- They satisfy a health conscious, budget-minded, plan ahead kind of person, who used last night’s massaman lentil curry (a freezer meal no less) as a quick wrap to take for lunch
- or a busy parent trying to pass off last night’s leftovers as something crunchy and new for lunch
- or an ingenious individual, one who prepared and froze the chimichangas ahead of time, who could pull them out as a quick (as in no prep, just reheat quick!) snack, dinner, appetizer for a guest, dessert, perhaps (well, maybe not that last one?)
- or an indecisive kind of someone, a sitting-in the-back-of-the-classroom individual (I so sat in the back), who just so happened to have leftover curry and tortillas and slapped them together, an individual who thinks the fusion revolution and 2fers are the greatest things since sliced bread (pudding) pops.
Some of these people sound so organized, smart, and put together. I’d like to meet you and learn your ways. Whoever you are, however you do it, so many options. Leftovers from one fabulous dish transformed two ways. Lots to love.
