We smoked a turkey last weekend. I have an ancient smoker that I picked up for free (free!), and this was my first attempt to use it. The process was surprisingly easy, painless, and hands-off. I might have found my new obsession. I covered the turkey in Cajun Spice Blend and stuffed the cavity with citrus. In fitting with the Cajun theme, I made the Instant Pot version of my Cajun Sorta Dirty Rice.
Instant Pot Sorta Dirty Rice is a lovely dump-and-go side. You can fancy it up by first sauteing the holy trinity (onion, celery, and peppers) and/or adding some chopped chicken livers or giblets, but it’s also flavorful as-is, though without the holy trinity and liver it’s only sorta dirty rice, hence the name.
The rice was the perfect compliment to the smoked turkey, but it’s also a lovely side for many other dishes, Cajun or otherwise. Try it with steak, Fried Pork Chops, pulled pork or chicken, or turn it into a meal in itself. You can add diced chicken before cooking the rice or, after cooking the rice, throw in some shrimp and saute them with the rice until cooked through.
