We’ve been on a bit of a Korean kick over here, largely because I opened a package of gochujang paste and then found a jar of black sesame seeds. Korean gochujang paste is a sweet-spicy chili paste – a little bit goes a long way, especially with young kids – so I’ve been gochujanging my way around the kitchen and throwing some paste into practically everything. Though Easy Korean Beef Noodles and Korean Beef Bowl have been instant hits and I’ll post them soon, we’ve enjoyed this homey tofu dish on several rainy days recently.
My children call most proteins “chicken,”tofu is no exception, and this is one dish where they’ll say, “more chicken, please.” Much like chicken, tofu is a blank canvas. With a little love, it shines. Marinating tofu gives it much-needed flavor and takes it from blah to yum.
I cook Korean Homestyle Tofu with Rice in the Instant Pot for a quick one-pot meal. I throw the tofu and vegetables in the pot and then top it with the bowl of rice. This pot-in-pot (PIP) method doesn’t cook the rice as nicely as a rice cooker, but it’s close enough and so incredibly easy and much faster than a rice cooker that I choose convenience.
