Holy yum! We’re doubling up on vegetables lately – lots of corn on the cob, fresh green beans, spinach, and salads. The kids are loving the veg-fest, and I’m loving that they’re loving it. Total love fest over here. And what we’re all loving, like get in my mouth love, is this recipe for Instant Pot Garlic Butter Corn on the Cob.
I LOVE corn on the cob in the Instant Pot. It’s so easy, it’s comical. There’s no waiting for a pot of water to boil, then dumping said pot of boiling water with the added bonus of slippery, rolling cobs of corn. Roasting or grilling corn is nice – love the smoky taste, it’s fairly hand-off, and it comes together fairly quickly. But then there’s corn in the Instant Pot: even cooking, infused flavor, done in less than TEN minutes – sold!
Garlic butter is a lovely addition to corn -a lovely addition to most everything, in my opinion. This recipe can be easily adapted to the grill or roasting, even boiling. But one thing that makes the Instant Pot superior to other methods is that the garlic continues to cook in the Instant Pot so you don’t have to spend too much time cooking it ahead of time, though I like to give it a head start in the microwave. While it continues to cook in its regulated environment, there’s no chance of it burning, unlike the grill or roast method. Plus, the Instant Pot cooks the corn under pressure in 2 minutes. That’s by far the quickest method of all.
The end result: perfectly cooked corn infused with a lovely garlic butter. Sprinkle with salt and it’s done. With a vegetable side so easy, it’s easy to double up on the veg, and with summer in full swing, why the heck not?
