Broccoli isn’t the easiest vegetable to cook. Cook it too long and it quickly turns to mush. Undercook it and it’s difficult to eat. I like to slightly steam the broccoli and then turn the heat up and give it a quick stir-fry so that it maintains a bright green color and is crisp-tender.
