My 20-monther came running over when she saw me sit down with a plate of Easy Chicken Quesadillas. I handed her a bite and she carefully dipped it in salsa before popping it in her mouth. Seconds later, she said “more.” Then she proceeded to eat my snack. All of it. She punctuated her chewing with “mmm.” Needless to say, this is a kid-approved snack, lunch, dinner, or even breakfast with a fried egg on top.
Bottom line, though, is that it’s easy. Easy is a lovely word to hear these days. In between bouts of illness, amazingly warm weather for March, and some major spring cleaning, cooking has gone to the wayside, and it’d be completely nonexistent if it weren’t for some handy and easy meals at the ready.
I use shredded rotisserie chicken but you can substitute any meat you have on hand or go the no meat route. When I make or buy a rotisserie chicken at the supermarket I shred and freeze the leftover chicken to have on hand for quick meals. I also freeze the chicken bones until I’m ready to make a quick chicken stock. (I use my Instant Pot- so easy!)
Give the cream cheese and salsa a quick blitz in a food processor, mix in the rest, layer the chicken goodness between tortillas, then fry them. Easy peasy!
We always seem to have cream cheese, tortillas, and salsa in the fridge so making a quesadilla is a no-brainer. Do you want something a little different? You can also stuff the tortilla and roll it like a burrito. Dry fry it with no oil or fry it in a bit of oil (seam side down first to seal it) and you’ve got yourself a chimichanga. You can also use the filling in enchiladas, a casserole, or stirred into cooked pasta. Try adding Fire-Roasted Jalapenos for a hint of heat.
Some weeks life interferes and cooking doesn’t make the cut. Fast food can be a welcome option. Combat those fast food crave, don’t want to cook days with some easy homecooked meals. Your body will thank you.
