Back in the day (a couple days ago), I ate cottage cheese with canned peaches, and I loved it. I’ve been eating this fine pairing since I was a child. I don’t buy cottage cheese that frequently. When I do but it, I have a cottage cheese frenzy for a couple of days and then the tub sits in the fridge and I can’t bring myself to finish it. In a bid to stop this wasteful cycle, I planned to cook with it, albeit with a few stipulations: the dish must not taste or have the texture of cottage cheese (aversion is the flipside of a cottage cheese frenzy) and it needed to be transformed in a way that my family would eat it (the cottage cheese was sitting in the fridge precisely because I was the only one in the family who eats it). Cottage Cheese and Peaches Pancakes fit the bill, and my family loved them. A pancake frenzy ensued and there are now some new cottage cheese and peaches pancake fans.
I would have saved years of wasted cottage cheese had I known cottage cheese is delicious and useful in pancakes. It makes the pancakes light and fluffy. The cottage cheese melts, and though it may leave little pockets of melted cottage cheese curds, there is no curd texture. You could also blitz the batter in a blender to get rid of the curds. Personally, I like the melty cottage cheese pockets. No cottage cheese texture, light, fluffy pancakes- sold!
Cottage Cheese and Peaches Pancakes are a new favorite in our pancake rotation. There’s a tub of cottage cheese on my shopping list as I type. It’s nice to know the cottage cheese will happily be consumed. No waste, full bellies, happy home.
