Carrot Coriander Soup is ridiculously easy to make, souper healthy, budget-friendly, and loaded with flavor. The soup can be made vegetarian or vegan, on the stove top or in an Instant Pot. Plus, it’s a dump-and-go soup – very little peeling, hardly any chopping, and it’s ready for the pot. This is clean eating at its best and easiest.
Carrot Coriander Soup is a classic British soup, and though I’ve kept the name (coriander sounds sexier than cilantro, no?), I’ve deviated in the preparation. The classic includes carrots with fresh and ground coriander as seasoning. Whenever I use ground coriander I get in a South Asia frame of mind, so I added some ground cardamom, ginger, coconut milk, and lime juice and zest to round out the flavors.
I LOVE that the soup is so easy to prepare. I simply wash the carrots and potatoes and chop them into large chunks – no peeling or fiddly chopping necessary – the peels are loaded with nutrients and fiber! Then I wash the cilantro and remove about two inches or so of the stem and throw it in whole, stems and all -so easy! I do remove the skin from the garlic and onion and peel the ginger with a spoon (not sure if the peel is edible) and give them a very cursory and rough chop before chucking them into the pot. Then I dump in the rest of the ingredients. Once it finishes cooking, blitz with an immersion blender. Done.
The soup is infinitely adaptable. I throw in an entire bunch of cilantro, but add as little or as much as you like. In fact, you can even omit the cilantro and leave it at carrot soup. Some people hate cilantro and say it tastes like soap, and it’s true, it does have aldehydes that are found in soap. The reason some people hate cilantro is pretty fascinating. The soup is delicious as is or you can top it with buttered croutons, a swirl of Sriracha, or cracked pepper. We’ve been eating Carrot Coriander Soup for breakfast, lunch, and dinner, and we’re loving every delicious spoonful. Healthy eating sure is fun when it tastes so good.
