I’ve been making this rice for many, many, many years, to name how many would probably shock me as much as you. As a lover of everything rice, I have had my fair share of rice blends, medleys, pilafs, whatever you want to call them. For a rice dish that doesn’t have meat as a star, this ranks high on the yumminess scale. This rice really packs in the flavor with its unique spice blend of thyme and allspice and the coconut milk gives it a richness and island flair that’s just begging for a drink with an umbrella. It’s a flavorful, “in your face” side, a side that easily showcases as the main event. I like to serve it with Jerk Chicken or Vegetable Kebabs.
