This is a never seen before, two worlds colliding, mind just blown mash-up, an ultimate “did this just happen” leftover experience; Sorta Cajun Dirty Rice a leftover the same week as The Most Amazing Creamed Spinach, a twist of fate for a never before seen match. Then, in a “just put an egg on it” moment, a breakfast miracle is born-aka a patented hangover cure, a new breakfast tradition, a where have you been all my life epiphany– a straight up damn GOOD breakfast. Why have I not thought of this before?!
The Cajun rice is full of smoky sausage, pinto beans, and twelve glorious spices. With a touch of heat, smoke, a bit sass and some je ne sais quoi, it’s a Cajun flavor bomb right there. Top it with creamed spinach like no other. A creamy, flavorful, luscious, melt-in-your-mouth experience made with a secret proprietary blend of cheeses-think Dubliner, Monterrey Jack, Pecorino Romano- that adds sweetness, tang, and complexity to the sauce. It’s not overwhelmingly spinach-y with just the right creaminess and some pops of heat from red pepper flakes (an amazing accompaniment to a steak dinner -and it freezes well!).
