I find myself craving this dish. I’m sure TOFU and CABBAGE don’t often spring to mind when “crave” enters the conversation, especially together. But this isn’t some ordinary tofu and cabbage. The tofu gets slightly charred from a spicy sriracha peanut sauce and it sits atop a bed of sweet, slightly bitter cabbage with a hint of coconut and curry. It hits all the right notes of spicy, crunchy, sweet, and salty.
Serve Thai Curry Peanut Tofu and Cabbage with some jasmine rice and you’ve got yourself a meal, a seriously good meal. It’s a homey, comforting dish that is perfect on a cold winter night or a rainy day.
