This quiche, like many good things in life, came together by chance. I opened the fridge and saw lots of eggs and a pie crust staring me in the face and instantly thought quiche (brilliant, I know). Then after some rifling, I had a pile of ingredients: some chives, prosciutto, fresh Parmesan, sharp cheddar cheese, and one really big onion. I thought, hey, that big onion would be good caramelized. Then when I couldn’t decide which ingredients in the pile to add to the quiche, I just added them all. As luck would have it, the ingredients melded together perfectly to make one really good quiche.
Quiche is a great go-to for brunch or dinner. It’s perfect for entertaining because you can make it ahead of time and then let it come to room temperature before your guests arrive or simply warm it in the oven. This quiche is elegant enough for company, perfect for brunch or dinner, easy on the wallet, and it takes minimal effort to put together. I even served it on Christmas morning, and it was lovely! I also made mini quiche with the same base recipe.
