Aww, mushrooms, wonderful mushrooms. Mushrooms were one my favorite things to buy at the grocery store in China – there were so many kinds and they were cheap- so I always had mushrooms on hand, especially shiitake. A shiitake mushroom is meaty with lots of umami flavor. Pair it with the slightly bittersweet bok choy and you’ve got yourself a fantastic combo. The dish is a nice compliment to Egg and Tomato Stir Fry.
